The quercetin content of alfalfa sprouts cultured under yellow light for 6 days, 8 days and 12 days was significantly higher than that of the control and other light quality treatments, and the PAL enzyme activity was also the highest at this time. The quercetin content of alfalfa sprouts under yellow light was significantly positively correlated with PAL activity. Comprehensive consideration, it is considered that the application of blue light irradiation is suitable for cultivating high-quality alfalfa sprouts.
